Dosha benefits: Kapha
Ingredients:
- Tomatoes, boiled and peeled 6 medium sized
- Fennel seeds 100 gms
- Onion 1 medium
- Garlic cloves, crushed 7-8
- Olive oil 2-3 tbsp
- Crushed black pepper corns to taste
- Coriander leaves, chopped 3-4 tbsp
- Fresh coriander sprigs 1
- Extra virgin olive oil 1 tbsp
Recipe:
- Heat olive oil in a pan.
- Add garlic to the pan and sauté till fragrant.
- Roughly chop onion and add with crushed black peppercorns to the pan and sauté.
- Chop the tomatoes, add to the pan and mix.
- Tie up fennel seeds in muslin cloth to make a small bag and add to the pan.
- Cover and cook on high heat.
- Tie the coriander stems and add to the pan.
- Add salt and 2 cups water, cover and cook.
- Remove the coriander stems and fennel seeds bag.
- Add chopped coriander leaves, extra virgin olive oil and mix well.
- Transfer into a glass bowl and grind coarsely with a hand blender.
- Garnish with some extra virgin olive oil, a sprig of coriander and serve hot.
