Dosha benefits: Pitta
Ingredients:
- Ash Gourd a medium size piece
- Green gram Dal ½ cup
- Coconut gratings ¼ cup
- Green chilies 2
- Jeera (cumin) 1 tsp
- Turmeric Powder a pinch
- Salt as per taste
- For seasoning:
- Oil 1 tsp
- Mustard ½ tsp
- Curry leaves few
Recipe:
- Remove the skin, seeds and white part of the ash gourd.
- Cut into small cubes and keep aside.
- Grind coconut, green chilies, jeera (cumin) and rice to a fine paste.
- Cook the green gram dal till soft.
- Put the ash gourd pieces in a vessel, add turmeric powder, salt and just enough water to cover the vegetable.
- Cook on medium flame till the vegetable becomes soft.
- Add cooked green gram dal and mix well.
- Add the ground coconut paste and stir well.
- Allow to boil for 3 to 6 minutes.
- Season with mustard and curry leaves.

- Even though Ash gourd is low in calories, fat, carbs, and proteins, it is rich in fiber nutrients and antioxidants that promote health and help protect from disease.
