Dosha benefits: Kapha
Ingredients:
- Carrots 2, chopped roughly
- Onion 1 medium, quartered
- Garlic 2 cloves, chopped fine
- Coconut or Almont milk ½ cup
- Coconut or Olive oil ½ tsp
- Cloves 2
- Powdered rock salt to taste
- Coriander to garnish
- Pepper powder a generous pinch
- Green chili 1 small (Optional)
Recipe:
- Heat the oil in a pressure cooker. Add the cloves and as they puff up, add the garlic and onions and sauté for 2-3 minutes.
- Add carrots, chili and 1 cup water.
- Pressure cook for up to 1 whistle.
- Cool the cloves and chilies, and churn using a blender.
- Transfer into the same pressure pan, straining the soup if you so desire.
- Add 1 cup water and allow to simmer over low flame for 7-8 minutes.
- Stir in the coconut or almond milk and coriander leaves. Bring to a boil. Switch off flame.
- Season with salt and pepper.
- Garnish with coriander leaves and serve 1 cup per person before dinner.
